Wheat-free, Yeast-free, Sugar-free brunch!


Just thought you'd like to see our brunch! Almond Oat flour pancakes with mixed berry syrup, deeelish. I doubt anyone will want the recipe... the only reason they tasted good to us is because it's our first day back on fruit after a 2 week haitus! I'm doing a yeast cleanse under doctor supervision to rid myself of bad yeast and test my food allergies, they suspect I am allergic to gluten. yikes! 

Anywho, now we're off to Brooklyn Flea to find a tall dresser. I have a very specific one in mind though, so hopefully we don't come back empty handed! Enjoy your sunday and check out the newly updated postsecret

ive been doing it for the past month - i feel so much better actually!!! the pancakes look yummo!!!
keep at it...its quite extreme but worthwhile...

Pancakes:

1 cup almond flour
1 cup oat flour
4 eggs
4 tablespoons canola or coconut oil
1/2 cup water (I used sparkling water to make fluffier pancakes)
1/2 Teaspoon salt
1 Tablespoon Xylitol (sugar substitute found at whole foods/health food stores)

*I added a few extra ingredients after tasting the first pancake because it tasted like a corn cake... which would be good with other meals! I added:

1 Teaspoon vanilla
a couple dashes of cinnamon

Mix all ingredients and cook just like you would regular pancakes. They don't bubble like regular pancakes so keep your eyes on them. This makes about 5 5-inch pancakes.

Berry Syrup:
1 cup blueberries (fresh or frozen)
1 cup raspberries
1 cup blackberries
-OR-
3 cups from a frozen mixed fruit bag

1/2 cup water
pinch of salt
1/2 cup xylitol (I used much less, and it was still very sweet)

Put all ingredients in a sauce pan and bring to a boil. The berries will begin to break down. After 5 minutes turn off the heat and mash with a fork or masher. Boil for another 2 minutes to combine and remove from heat. The mixture with thicken as it cools. It makes about 2 cups of syrup. YUM!
